The Monkeys are stuffing their faces!

As our household has been doing meatless Fridays year-round (not just in Lent) I'm always on the lookout for new and exciting meatless recipes.  Recently one of my friends repinned on Pinterest a pin of an avocado, egg, & spinach salad. (original blog post)  My children INHALED it, I'm talking LICKED-THE-BOWL-CLEAN!  I made half of the recipe this morning to have my husband try on his sandwich for lunch.  I combined:
4 hard boiled eggs (chopped)
2 oz. Greek yogurt
sea salt (to taste)
black pepper (to taste)
Penzeys granulated garlic (to taste....my own addition to the recipe)
a handful of baby spinach chopped into little pieces
once avocado
I served it to the monkeys with pita chips.  The loved it!   Next time I make it I think I'll add some cilantro, as our family loves that stuff!  For those of you whose children might not like the egg pieces, you could easily put it all in the food processor.  
Our family is on a "back to basics" mission with our eating habits, so stay tuned to hear about our discoveries as we go on our journey!

Dusting off the covers

It's been a while!  To be honest, I forgot about the blog.  I'm going to work on that!  All is well here, I don't have time to update now.  I figure by forcing out this little bit it will let y'all know that we're still alive & kicking, and make me put out a better blog in the next few days!

1st Birthday, already?!

I can't believe that Bug is going to be turning 1! Where has this year gone? I need to start planning the party. The food, drink, decorations are no problem. The task that seems to be daunting is the guest list. With Moo, it was easy...the playgroup. This time around I never really bonded with the other moms from the hospital, and don't have a separate playgroup for Bug. Many of the kids in Moo's playgroup are older siblings now. Do I invite those families? I just don't know!

I can do this!

It's been a long time, and I'm not going to start the list of excuses, you know them!
The monkey and the bug are growing in leaps and bounds...they've all but taken over the house!
We've all heard how making a menu and sticking to it help with the budget, so here goes! I figure if I post about it here, I'll be held accountable.
Thursday: Daddy & Daughter date night! Frozen pizza, per request. Mommy & bug are going to a book club dinner.

The fog is beginning to clear...

I have a lot to catch up on! Last week the girls turned 3 months and 29 months! Where has the time gone? Backing up a bit..."The Bug" was born on November 3, 2009. Shortly after midnight I woke up to my water breaking! Making all of the arraingements for Moo's care (that had been planned in advance) we made way for the hospital. After 12 hours of labor (back labor with stacked contractions) I had not progressed so we opted for a repeat c-section (once you've had a c-section you can't have pitocin to get labor going). At 15:07 (that's 3:07 pm for you non-military/ems folks) our beautiful daughter was born. She weighed in at a whopping 4 pounds 15 ounces and was 18.5 inches long. We were all surprised at her weight, as the ultrasound the day before showed her at close to 6 pounds! She was very healthy from the start! She got to room with us the entire time (Moo was a NICU baby, so this was very weird but welcomed!) "The Bug" has been growing so fast, another difference betwwen the two!

The adjustment from one to two has had it's challenges (all occuring when Daddyman is at work). I'm figuring it out one day at a time. I can't imagine life without my Moo & Bug!
